My suggestions are:
1. Sacks allowed
2. Hurries allowed
3. Key blocks (similar to an assist in basketball) if a runner scores on a key block then the lineman gets an assist.

Without understanding each teams blocking schemes it is impossible to have those type of stats. We can see easy enough when a guy gets beat one on one but often it isnt that simple. If one guy blows an assignment then someone else may end up looking like the guy who didnt do his job. Each team keeps a grading system for each lineman (both offensive & defensive) and they are graded on completing their assignment each play and given a percentage grade during the week of the past game. If a player grades out at 95% most coachs find that to be around the proper grade for doing a good job (of course it varies depending on the coach and their particular grading system).Sometimes a "key block" isnt a block at all, it is a lineman selling a play that isnt happening and getting a defensive player slightly out of position just by presenting an idea that something will happen by body position (like on a screen pass, the lineman "misses" a block,only it was by design to get the defensive player to run past the screeen taking himself out of the play). Or instead of blocking the player letting him go around him, taking him out of the play with no contact at all. These are some of the reasons it is impossible to provide stats for fans.

1. If the defensive lineman goes through multiple defenders, who on the offensive line should get credit for allowing that sack. If the DL goes around the offensive line and blindsides the quarterback, who gets credit for that?

2. Same as number 1

3. It's more than the lineman who contributes to helping the running back get in.

They Dont have stats for lineman because it's really hard to keep stats for everybody in the line and it is also very easy to miss a stat and many lineman would be complaining about it. Many Lineman get away with holding all the time because it's hard to see

The do keep track of stats for lineman such as pancakes
