You have a whole lot of work to do before you get to the point where you need to even think about a publisher... but when you do reach that point, pick up a copy of the 2007 Writer's Market Guide. It's chock full of major and small houses, including what genres they publish, the average wait time to hear on a query, whether they accept unagented submissions, how they want to hear from you (query only, query + synopsis, query + first three chapters and synopsis, full manuscript), etc.
A general rule of thumb... any publisher that asks you for money isn't legit. Self-publishing will satisfy vanity, but most writers (aside from the truly desperate) don't consider a book really published unless you get an advance and royalties.

Your best bet is to go to the local public library and ask for reference books on publishing. There is a book that comes out annually which has all of the publishers names and address information; you can also buy a copy at B&N, Borders, et al. I believe there is a section that talks about do's & don'ts for amateurs. Also, look at the trade papers like Publisher's Weekly to get ideas on what is selling and what isn't.

One author to another, attend several writer's conferences and take very chance you get to meet agents and editors - after you spend a bit of time researching each agent and editor present to find out if they accept the kind of book you're writing.
A good working writer's group with members that are actively selling is an incredible boon for a writer looking to break in.

I'm currently writing a book as well. I heard that you should look at books that are similar to yours or in the same genre and send your book to their publisher. Its probably also a good thing to find an agent. Unfortunatly they are very hard to find because there are several fake agents and managers on the web. When you send your book to the publisher, also send your friend's reviews on the book and the summary of your book.
