If you can't fake him out to get him on the scales you are just going to have to pick him up and hold him while you step on the scales. Then put him down and get back on the scales without him. Subtract the weight you and he both weighted from the what you weigh by yourself.

Being that your rabbit does not like being picked up, you could do two of things to weigh it. These are almost the same, and they only differ on your preference on how to handle it.
1. Put you rabbit in a carrier(preferably one that weighs at least 2 lbs, so it shows on the scale) and weigh it. Then deduct the weight of the carrier alone.
2. Do the same thing, but with the rabbit's cage(put the rabbit in a carboard box while weighing the cage). This is if you do not have a carrier.

Does he try to bite you?? If he does then keep his mouth shut and just pick him up and put him on a scale such as the kind you would weigh for fruits and veggies. If this is a must to weigh him then do so. After you weigh him then reward him with a treat.

Put bunny in a box with the lid closed and weigh the box and bunny together, then take bunny out of the box and weigh it by itself then subtract the weight of the box from the weight of bunny in box to get bunnys weight...
bunny and box minus box weight=bunny weight
Bunny may be to light to register on normal scales with you holding it, not to mention the stress if he doesnt like to be held, this way would probably be easier. and you can probably use mums kitchen scales this way.

Pick up your bunny and get on the scales. Record the weight. Put the bunny down and reweigh. Subtract your weight from the weight of you and your bunny and you will have the bunny's weight.

Maybe you can wrap him in a towel, especially if he doesn't see it coming. Stand on the scale with him in your arms. Then stand on the scale without him. The difference will be what he weighs. Good luck.

You can put the water and carrots and lettuces around the scale and he will soon get on it if you put the food around it right because he have to eat.
