You can choose to some degree, depending on your program, but usually everyone has to do English, everyone has to do math, everyone has to do psychology, etc. You may be able to choose which science course, which history or geography course, etc.

It definitely depends on the individual school. Be sure to read the catalog before you go. Usually, you get to choose, but you also have some guidelines to work within. You have certain requirements, and sometimes that may include time limits. It also depends somewhat on your major. Normally, you'll need to take an English composition class in your first year, but otherwise you have flexibility. Of course, if you utilize too much flexibility, you'll end up spending an extra semester trying to get together the right courses to graduate.

Almost every school that I know of assigns people to classes for their first semester but lets them choose for the second semester. Of course, some schools may be different so it's possible that you'll be able to choose.

When you know where you've gotten in, call the individual schools and ask what their policy is regarding registration for 1st year classes. That's the best way to get a good answer applicable to your particular situation

You have wide but not unrestricted choices. The rules vary school to school. Upper level courses tend to require that you've finished lower-level courses. You couldn't take advanced physical chemistry, for instance, without having had general chemistry: you'd be lost.
