Why do dogs bark? Cats meow? Ducks quack? It's simply their natural means of vocalization, and that means is rather limited. Also, cows moo when their calves are taken away to be weaned, sold, etc., when they are separated from the rest of the herd, when they are in heat and calling for a mate, and around feeding and milking time.

It's just the way they were made. It's how they communicate with other cows. That's like saying, why do humans talk?
