Straight outta da Coal Region kitchen!
City Chicken (not really chicken at all)
1/2 lb. pork
1/2 lb. veal
1 egg, beaten
Bread crumbs (seasoned if you want)

Heat oven to 350 degrees. Cut pork and veal into 1" cubes. Thread on bamboo
or wooden skewers, alternating chunks of pork and veal. Dip the skewers in the
egg, then the bread crumbs, to coat. Saute until browned.
Put skewers in a baking pan, . Cover in foil, and bake about 1
hour.
During the depression, chicken was more expensive than pork. So pork and
veal were substituted for and "passed off" as chicken. The pork and veal are
alternated on a wooden skewer such that it resembles a chicken leg.(Beef stew cut from the meat section of your grocery works also).

I made a meatloaf and some mixed vegetables...was going to make homemade mashed potatoes but discovered the potatoes weren't right and in my hangover splendor, did not feel like driving my still buzzed self to the store to get more taters. So we had butter rolls.
We used to eat black-eyed peas on New Year's Day but have found that I ran across no luck during the year, so we're trying our New Year without them.

Some leftover lamb from Christmas, a little leftover spinach from the day after Christmas, some leftover macaroni and cheese from the last time our granddaughter visited, half a leftover potato from the day after Christmas and a few green olives. And a beer. C'mon over if you want!

Its New Year Day so we had Ham and blackeyed peas for good luck - also roasted potatoes too. For dessert it was New York cheesecake with cherries.
