Ok...everything that Benidict saw on his video was prerecorded and just fed to his video screen.
When Benidict tells that one guy to make the call to the police, Ocean's tech guy picks up the call.
The rest of Ocean's team, except their tech guy, that remote control car guy, and the rich guy...come to the casino as the SWAT team that's come to take back the vault.
When they went down the elevator shaft they just picked up the Ocean, Linus, and 'The little chinese guy', got them into to SWAT team suits and then they all left together carrying BAGS of SWAT gear, that were really the bags of money, out of the casino...that's how they got the money out.
Major clue to this is there's this scene where the camera pulls back sometime when they're in the warehouse and you see this pine tree car air freshener, but you don't know what it's hanging from. LATER when the SWAT team leaves you see the SAME air freshener hanging from the mirror the SWAT van.
Watch the movie again and you'll see it.

The entire movie of Ocean's 11 (the planning, execution and 'failure' to get the egg) was all a ploy - a show the Night Fox. Ocean and Pitt talked to Lamark and because of Night Fox's errogance and Pitt's love for Lamark's daughter, he wanted Ocean's team to win the bet. He told them at the initial meeting that the egg would be transported by train that next day (and that's when they stole it and stashed it in a safe place). Pitt put it in his duffle bag and gave it to Lamark when he met his daughter at the end. Quite a good twist - and the Night Fox had no clue until Ocean and his wife asked for their money ...

If you watch the sequence right at the end you'll notice that the swat team called in is actually the gang. They staged the same events in the fake vault they built earlier in the movie and patched into the cameras at the casino, there fooling Andy Garcia's character and casino security. The phone call to the police is intercepted (somehow) by the gang, and so forth. I figured this was pretty obvious.

If your are refering to the newer version with Pitt and Clooney (this is a remake if you didnt know) then...
They used a mockup of the vault to record them robbing it and they hacked into the casinos cameras to show them their recording. While that was going on the explosive which where in the suitecase where used to blow open the doors. They called in the swat team which again the security was hacked and the call was sent to the oceans 11 team. They went down to the vault and got the bags of money and walked them right through the casino dressed as swat team. thats kind of a simplified version a bit complicated to explain

In addition to a brief city-wide power outage, they need certain access codes to get inside to the elevator. These are updated daily, and are carried on Benedict's person. So Damon is the pickpocket. He is introduced to Benedict as a member of the Nevada Gaming Commission, tracking down a dealer who has a record. The dealer in fact is a plant, a member of the crew, who does have a record. And this enables Damon to get into the same room with Benedict when they question the dealer, played by Bernie Mac. A staged scuffle is created, at which point Damon picks Benedict's pocket. Damon doubles back saying he forgot something, as Benedict hurries on to the fight.
A third element, another distraction, is created by Carl Reiner's character, posing as a nebulous and shady Russian money man. He convinces Benedict to let him store some jewels in the deep vault, overnight. In the process of doing so, he stages a heart attack to distract the local guards from seeing Damon doubling back.
Another element is control of that very surveillance video. As Damon doubles back, while Reiner stages the distraction, a third member cuts in with pre-shot video of empty hallways, and an empty elevator. Meanwhile, the security is worried about Reiner's character, as Pitt dashes in with two paramedics, also members of the crew, who declare Reiner 'dead' in order to get him out of there.
Clooney has joined Damon in the elevator shaft ready to rappel, and Pitt is wheeling away the 'dead' Reiner. Both get on cellphones to call their control center - blackout the town.
Meanwhile, the last element is the 'greaseman', a Chinese acrobat and contortionist, able to squeeze himself into tight spaces and leap around. He is concealed in a money cart, which is placed inside the vault. He exits the cart and jumps to shelving in the vault to avoid scanners that are knee or ankle high.
After the brief blackout, Clooney and Damon find themselves looking out the elevator at a short corridor at two guards in front of the vault. They use some pop-up grenade device to disable both. The 'greaseman' plants charges inside the vault. Clooney plants them outside. And the vault is blown. Meanwhile, surveillance shows something different than what is actually occurring inside the vault.
Finally, when ready, Pitt calls Benedict directly on a cellphone, which Clooney secretly dropped into Tess's pocket. Pitt says Benedict is being robbed. The video suddenly shows something different. And Benedict calls for the SWAT team.
Ultimately the crew steal the money. Whether they get away from Benedict in the months and years afterward is the subject of the sequel,

Ocean stole it the day before it got to the museum. Night Fox stole a replica the first night it was in the museum. They went to talk to lamark (before they talked to the night fox) after they found out it was the night fox who was messing with them (remember the night fox was trained by lamark). Lamark told them the location of the egg and how to steal it before the nightfox even set the game in motion. And Oceans 13 is much better than 12.

They pretended to be the S.W.A.T. team, and ran the practice video ( they taped themselves practicing the heist, in that warehouse place ) over the real servalance camera. I hope you can follow that. ;)
