Because she was fossil hunting. Her name was actually Mary Anning, born in 1799. the rhyme was written about her. She sold the fossils she found to interested amatuers, tourists, and proffessors, to pay off the debts her parents death's had left the family in. Her brother Joseph found the first ichthyosuar, and she made several significant discoveries herself (like the first complete plesiosaurus dolichodeirus skeleton) and taught herself a great deal about the subject, though she lacked a formal education.
The original tongue twister didn't say "Sally". that was added in later to make it a harder rhyme.

Most of the ones you pick up are broken, it's very hard to find good complete ones like Sally has. Why is that? Because Sally gets up at 3 in the morning and gets all the good ones! Some enterprising capitalist is our Sally!
