An educational, scientifical test would be mix each with a small amount of water and some steel wool threads and see how the steel reacts in each. I would expect it to corrode quicker in the salt solution.

Weight them. Salt has a density of 2.16 g/cm^3 while sugar has a density of 1.587 g/cm^3.
You can also put an increasing amount of each white powder in some water, while stirring. When there is excess salt, it will remain in the bottom, unable to dissolve anymore. Sugar, on the other hand, will become an increasingly thicker syrup.

Dissolve each in pure water. Salt water completes an electric circuit. Sugar water will not. This is because salt produces ions (electrically charged particles) in solution, while sugar does not. So only the salty water conducts electric currents.

Sugar is finner ground than salt. Smell is different, suger has a shiner look than salt. Suger is heaver than salt by volume. Suger will melt when heated, salt wont. Suger will put off a poison gas when burned, salt wont. Salt will sting and open cut in the flesh, sugar wont.

I'm pretty sure that in cold water, salt won't dissolve. Try it first before putting it in your project though.

It's easy. Sugar sparkles a little in sunlight, and salt does not.

Put them in a spoon and try to melt them with a lighter. If it melts, it's sugar.
