I am an electrician and I have found no shortage of plumbers. I think this misconception arises from when people have a leak and desperately need a plumber only to find they are busy/ not interested. If I need one for a job, I can get one within an hour. Why not retrain as an electrician?. Highest paid trade, not as dirty as plumbing ( do you really want to put your hand down someones blocked loo) and can be very interesting. You will need to be reasonably good at maths, fit, have a head for heights.
Try the local colleges and the local authority. I taught adult apprentices electrical engineering, so schemes are available/

You need to see if you like it first, you can try a taste rcourse at your local FE college and perhaps start in Sept on a proper city & Guilds plumbing. You can do this part-time or fulltime.
Any cowboy can go self-employed but its best if you ask an experienced plmber or 2 before you leave your current job.
Unless you charge the earth or work all gods hours it will pay reasonable rate
