If the Council stated that your age is an issue... why would you argue? For shame... Study the ways of the Jedi and emulate them. That is as close as you will come but you will be a great person for the trying.

Apply for "lab assistant" then see if you can audit some classes using your employee status. You can increase your skill that way, then reapply for training after a few years when you can demonstrate some talent. If you don't get in, at least you've learned something, then you can open you're own tutorial center for Jedi hopefuls.

Believe it or not, there is a Jedi religion out there now. Search the web. There are several sites that might be of interest to you.

Get a lawyer and file an age discrimination suit. Make sure the lawyer brings some ysalamiri to any meetings you have with the defendants.
