Definitely the Star Wars Knights of the Old Republic series. As role playing games, they cover all the bases right from having good storylines, customizable characters, and very solid graphics.

If your PC can handle it, I would say Oblivion is the best RPG out there and it's won tons of awards this year from the various sites and sources. Some places even cite it as the game of the year. It plays in a first person perspective.

IF you'd rather have the traditional top down view, Neverwinter Nights 2 just came out a few months ago. Some say it's the best thing since Baldur's Gate 2 which is another great RPG but many years old.

If you like the Source Half Life engine, you can always go with Dark Messiah. It's kinda short but I had tons of fun with it.

Those three alone should keep you busy and happy for a while and they are all single player.
