For example, I am writing about a dance performance, but there are some scenes in which the dancers speak - what would this be called?

There are lots of words you could use - dialogue (if they're talking to each other), monologue (if they're playing a character but speaking alone), soliloquy is a word that refers to a character speaking alone onstage, often to the audience. Narration is another one.
