Diners offer so many items on a menu, sometimes pages and pages of choices. Then they have your food ready in 15 minutes. How can they have so much food ready and available and prepared so fast? What's their secret?

I work prep in a huge restaurant and heres the secret... everything is pretty much ready for them to cook and throw together. Any side of veggie you order has already portioned into little baggies by preppers... Meats are thrown in cooler drawers beneath the fryers and broilers.. they really just pull stuff out and either cook it, like steak, or microwave it, like pasta, veggies, etc. Hope that helps you..

They prefer products prepared from the frozen state. Like freezer to fryer, oven or microwave. You can hold allot of different food items for a long time in the freezer. Some items are thawed for the day of use in a cooler.

Not only is there portion control and freezing and nuking, but the list goes on and on because you need to use up what you get. It wouldn't make sense to have, say, only one dish on the menu that uses mushrooms, and then the whole case goes bad. So it's making stuff up that uses everything that's bought in so there's no waste.

It's a huge red flag to me when I see a menu with only ONE menu item with portobello mushrooms on it. I wonder how much they have to throw away every week.

It's basically thinking about what all you have that you normally order and mixing it up and inventing new dishes.

They have the food preped and thawed and they have chefs that are trained to do it fast. If you look closely you will notice that many of the dishes use many of the same ingredients. They almost always have the same choice of 5 or 6 side dishes. Desserts are often made way ahead of time, refrigerated and served cold or microwaved.

here's the thing. most diners have everything prepared in a commisary. its a place where they bag everything in proper amounts proper ingredients and the like. after this the commisary sends it to all the outlets and in the outlets they just take out the respective bags all prepared and cook it or heat it in some cases. its as simple as that. most fast food chains dont prepare everything on hand its already ready made for them all they have to do is to cook them. and in cases with a lot of food available its a matter of marketing if you look at it closely most of the products they sell are of the same basic ingredients making it cheaper for them to produce. since in one product like one whole cow they get to make a lot out of it making it more profitable for the company.
