18K means 18 karat
and so on.
The higher the number, the more gold content & the softer the jewelry will be. Higher number also means higher cost/value.

When you buy jewelery or silverware, they don't consist of pure silver or gold, but of an alloy (that is why silver can go black with time). When it says 925 silver, it means that it has 925 of thousand parts silver, or 92.5% silver, and 7.5% other metals. It is the same with gold and platin, 585 gold meaning 58.5% gold in the alloy (gold alloys don't contain much gold, because pure gold is too soft for jewelery).
