But how do you start on the third? The yarn ball and all the knitting so far is all attached to one needles :S

If you are knitting a flat piece and have knit all the stitches from one needle to the other, your working yarn (the yarn from the ball) should be coming from the last stitch knit on your right hand needle. That's how it works, the last stitch knit is coming from the ball yarn, and the stitch before that has it's yarn feeding into the new stitch you just made--knitting is loops through loops. So, now you have an empty needle in your left hand and a full needle in your right hand. Just change hands so the full needle is in your left hand with the point headed to the right and the empty needle is in your right hand. Pick up the ball yarn in your right hand. Now, depending on what your instructions may or may not tell you, the best way to get a nice edge is to hold that working yarn in front of the knitting on the left needle, slide the first stitch to the right needle without doing anything to it, and then bring the yarn BETWEEN the needle tips to the back (if you go over the needles you create a new stitch or yarn over and we don't want to do that at the moment--pretend your needles are a drawbridge and the yarn is a ship that needs to get from one side to the other, a ship can't jump over the bridge, the bridge has to open to let it sail through, you'll need to know this when you learn to purl, too) and then knit the next stitch and work across. When you knit all the stitches, once again your working yarn will be attached to the last stitch knit and all the stitches should be on the right hand needle.

You need to switch hands...take your needle with the stitches on it and transfer it to your other hand...and your empty needle to your other hand.
