I think I should take a stab at this!

Leviathan is a giant seamonster from the bible - find him in the book of Job in chapter 41.

Its a general term that was used by fishermen to describe 'seamonsters' so whatever they saw which they felt to be huge, maybe whale sharks (which are fish) or real whales is debatable. In the bible the creature breathed fire so I hardly think the description can be used to define a specific living (or extinct) animal. Contrast with 'behemoth'.

The word 'leviathan' has been adapted (for example, in modern Hebrew) to mean 'whale'. There is a good deal of speculation as to what it really is, and it could be anything from a Nile crocodile to a late-era descendent of the plesiosaur or hadrosaur.

It has since come to simply mean something large and all-consuming.

In Final Fantasy, Leviathan looks like a very long snake that looks like a dragon. Kraken looks like a giant octopus

I don't know. The Leviathan in the book of Job sounds a bit like a fire breathing dragon to me.........
