In the English language most nouns are countable, but there are several uncountable nouns too (like the examples you gave). We use these words in the English language because these words either came from Old English, Latin (the 'et cetera' you used), Greek, German, and/or French. Since English is a mixture of languages, so there are some nouns that are not counted by adding 's'.

Sorry, answer won't fit here but it isn't only English that has such stupidity, many other languages do too. Example, in French, everything is either male or female (le or la), not only do you need to know how to spell it, you need to know it's sex. Bouche is mouth, is it la or le (I reckon it would depend whether it was on a man or a woman) but for memory, it's la, female! Yes, English needs to be re-written or corrected. The Americans have made a start, words like honour and colour are honor and color etc.

The English language is known as a "stealer" of many other known languages such as Latin and French. Our grammer rules and vocabulary can be traced to these older languages. The inconsistency you mentioned is because of English "stealing" from different languages.

English is a messed-up language and often doesn't make sense. The so-called "rules" of English are merely suggestions. The only thing you can do is memorize those cases that don't follow the "rules." Good luck!
