Because she gave up on life, Anakin broke her heart, and she felt she had nothing to live for.

At the time of the movie, the Sith Order operated with the "Rule of Two." That rule was initiated by a Sith Lord (known as Darth Bane)about a thousand years earlier who observed that having more than 2 Sith would be a problem because they had a hard time making sure all of the Sith would work together. Having only two helped keep the Order going and focused. Now, there were other Force users who were darksiders who would work with the Sith from time to time. For example: Asajj Ventress. One could even call her a disciple of the Sith, but she was never actually a Sith herself. One of the driving motivations for Sith Lords was to almost always be on the lookout for a new apprentice to replace the other Sith, either due to death from an enemy, "natural" death due to their exposure to & use of the Dark Side, or assassination from within. Hence why they would allow other darksiders to work with and among them. However, that is all in different narratives than the feature films. Those other narratives are called the Expanded Universe, or EU. While they are considered by Lucas as "official" and "canon," they don't guide or corale the films. As for the Younglings in the Jedi Temple, I suppose if the narrative were meant to be broader and specifically encompass the EU fully on screen, Lucas may have considered writing that Anakin spirited them away to be indoctrinated into the Dark Side to be future potential candidates for being Sith (or simply pawns of Sidious), but the movie was meant to be part of the finite film series first and foremost. And in said series, there was no subplot about Sidious employing other Dark Side users among his ranks. Therefore, there was no call for such a plot point. That may not have been what you were looking for, per se, but that's the basic reason. Oh, and Casper S is dead wrong. Sorry, Casper.

Something about psychological trauma. The surgeon droid had to operate to save the babies and said something to the effect of '...she has lost the will to live'. I was under the impression they had to operate to save the babies and in doing so killed Padamae (or however her name is spelled) because she was in a state of shock already. The impression given by the scene where she died and the babies were delivered appeared to be a medical anomaly and that there was confusion why she was dying inexplicably. Thus adding mystique to the moment to make it emotionally profound.
perhaps a follow up autopsy would show something more simple.
It could also have been heavy trauma done to her by the force choke hold which Anakin, turned Darth Vader had placed her in in the previous sequences....thus she could have broken blood vessels and been bleeding in the brain or what have you. Also there could have just been some of that very powerful voodoo latent inside her because of the force being so prevalent and the force also being in her children. It is arguable that the only reason she survived for so long or that her children did inside her womb is because of their connection to the force before making it into a trauma station.

Because she was pretty much absent in Episode IV: A New Hope, almost to the point of never mentioned.
Though she shouldn't died exactly after the child birth.
Her betraying Anakin also seems to be out of place.
Personally, I was expecting she to died during a Separatist attack, causing Anakin to be more determined to eliminate the Separatist movements that he lose focus on other things.

To be dramatic; she is referred to as an auxiliary character and her death was necessary to make sense of the rest of the movies. Why did Vader continue to be so angry? Why didn't he go home to his wife and make a happy home.

supposedly from her injuries that the sand people gave her. The timing for her to die though (right at Anakin walked in) was very corny. I didn't like that part at all.
