It's the endorphins.
Since being undead is very painful and immobilizing, zombies crave the natural chemical painkillers found in the living human brain for nourishment. Since these chemicals cannot exist in an artificial matrix, like saline solution, they must be derived from a living person.
The more they eat, the more active and alive they are. It's like zombie insulin.
Imagine that you're a zombie, and you have the same imperative that any living thing does: You want to survive. If you do without endorphins for too long, you become completely immobilized and decay slowly and painfully until you're all dead. Not the best way to go.

this wont artwork considering zombies carry really primal instincts so even if or not they're complete they are going to nevertheless have the desire to attack and they dont extremely get complete considering some zombies stomaches are ripped out and frequently this is the sparkling blood and flesh that they desire and on celebration brains (brains might want to be like caviar to them)
