As far as teams, the Ravens, the Bears, or the Panthers.
Concerning formations, put in more linebackers and lineman.
4-3 is the basic run stopping form, but if you are willing to risk giving up passing yards, 4-6 and goal line formations are even better. Also, blitz some linebackers or even secondary if you have extra corners in. If you don't, you'll rarely stop the runner at or behind the line of scrimmage.

Well all teams can be good if you choose agressive plays, but probably the best even if you dont do that are the bears and patriots cuz the have big front men and agressive linebackers. If you change the bears defense the 3-4 then there unstoppable against the run.

Just put a lot of guys in the box (close to the line of scrimmage) and spread out your line (L1 then the Up directional button on PS3). That's the easiest way to do it.
