Really depends on what you want to do. Is this your first time in Vegas? For a fun/party time, stay at the Palms (my favorite) or Mandalay Bay or Hard Rock. If you want to be on the strip to walk around a look around a lot, a central strip place like Paris/Aladdin is fine. If you're on more of a budget, Ballys or Flamingo are ok too. Excalibur is pretty reasonable too... but a bit further south. Luxor is nice, but not as new - and it's the pyramid so might be a good "gimick" for you to stay there if it's your first time. If you want to live it up, Bellagio (my personal favorite sports book), Venetian are 2 primo places. Or if you're like super rich :) - Wynn. Again, depends on what you want to do. If you don't want to be anywhere near the strip, but want good golf, relaxing time, you can even stay at Lake Las Vegas.

I stayed at the Hilton. I got stuck with a room with a bad view and no water pressure. I was sooooo disappointed. This was just a few months ago. I don't know that I will try them again. Plus I think they are too far north.
I also stayed at the Tropicana. Older Hotel but clean and the rates are the best around if you book on their site directly. I joined the players club and got even more off of my room and cash back and I didn't even gamble that much. I stayed in an upgraded Island tower room for less than $50a night before my comps.

I like the Hilton, its classy, off the strip, and I always win at the Blackjack Tables. The remodel is done and the new suites are the bomb. You can take the monorail to the strip from inside the hotel.

The Mandalay Bay is very nice, may want to look into that depending on how much you want to spend of course.
