how do you make the stuff you buy at the store

You can't make it. They actually dig it out of the ground. The clay then goes through lots of processing and is blended with other types of clay and other materials.

It's way too difficult to do yourself. If you ever hear of potters "making" their own clay, they mean they are blending their own clay. They still purchase clay, they just blend different types of clay together to make their own special mix. If your not a pro, your better off just sticking with a blend they sell at at an art supply store.

By the way, you "fire" ceramics in a kiln. Not "bake."

Clay in a form used in sculpting is a natural material, even if processed to be cleaned, etc., for sculpting and pottery.

Again, thanks # 1 "FIRE" not Bake.

There are many online sites you can go to in order to come up with recipies for "making" substances that can be Shaped, sculpted and Baked, perhaps much like playdough, or in fact real dough is used for the purpose, but none of what you find will strictly be "Clay"

You buy it that way at Wal Mart, it's called Polymer clay and, it already made. It's baked at 250 per 1/4 inch thickness, in the oven by the way.
