Honestly, I think the only sorting you'd need to do is wash you whites by themselves. I wouldn't wash like colors like I've seen people do, but whites will grey over time if you don't wash them by themselves. Plus, you can add a touch of bleach every once in a while to brighten them up so you don't get that dishwater grey look.
I think after you wash something for a while, it doesn't bleed anymore. The only time that something like that has happened to me was if I left the clothes in the wash for too long and something dark, like a vividly colored sock, was laying on something white.

It is a personal preference and depends on the amount of laundry you have, the size of your machine, the temp of the water, etc. I do whites, lights, darks, jeans, and towels. But sometimes I put whites and towels together because I don't have enough for a white load and I do them both in hot water. I also mix my dark clothes and jeans together because I then have a full load and wash them both in cold water. Now my daughter is a total slob and will mix everything from jeans to white socks and bras in one load. Do it how you want, the world won't end. Just be careful with something new and red!

I can assure you, colors can still and will bleed if you wash them all together. If you're ok with pink underwear and socks then enjoy. It depends on the dyes used on the clothes. I have some that specifically request "Wash with like colors" and the like.

If the clothing was washed before and didn't bleed, it shouldn't now. Just make sure to wash it on color setting and only use color-safe bleach.

People sort their laundry for a reason. New colored clothes almost always bleed, so don't wash them with something white if you care about wearing it again.

Listen to your mother! Even if detergents have changed, clothing fabrics and dyes have not, much. All you have to do is ruin one nice outfit to find out. Washing instructions are printed on the labels for a reason. Follow them!

Most colors are alright washed together in cold. However, if you have whites, like t-shirts, they will end up looking gray or pink if you continue to wash them with colors.
