Doctor stated it was my intent to kill people. I never said that. I said I now understand why people go postal. I left the office stating "F-U" and the Doctor called the police on me and had me arrested for making terrorist threats.

Is there a transcript of the session? That would be the best way to prove any discrepancy between your version of events and the doctor's version. An expert witness is going to be very expensive, so it's not really practical. Also, even if the expert testifies that doctors do lie, it will still be up to the jury to decide IF the doctor lied. Most of the jurors know that it's possible for someone to lie, so the expert testimony wouldn't really be very helpful.

If you still really want to use an expert, you should talk to your lawyer about it. S/he will probably be able to find an expert for you.

That is called "homicidal ideation" and your doctor was required by law to report it. In psychology, homicidal ideation is the same thing as saying you are going to kill people. You are lucky you didn't get an involuntary commitment.

You will never get someone to testify that "psychologists can and do lie." It wouldn't do any good if you did. Everyone can and does lie, that is a given. Lying isn't the point, and, your psychologist isn't lying anyway. You just don't understand the basis on which you were arrested. Saying that you understand why people go postal is enough if you have a history of violent outbursts, past assaults, or homicidal ideation.

You need a lawyer, not a doctor.

The lawyer will round up any needed medical testimony.
