First off dont even think about it. If you do, first it will make the cars computer go nuts Second it will no longer run. Third it will no longer pass the smog and finily it will make a lot of smog we all have to breath.
As to if it will make the car loud, well no cause the muffler stops the noise.

i did this several years ago the only difference I noticed was a huge increase in gas mileage, how ever, we had some pretty serious engine problems after it was removed because we had altered the back pressure the engine was designed to operate with.

The cat does restrict the airflow, so it would be slightly louder (assuming you keep the muffler). Just be aware that removing it could be illegal, depending on your location. It's definitely worse for the environment.

It might be a little louder,but the tone of the exhaust would be different.
