Never heard of the "butcher" version, I've always used this one!

Personally I have always said "This little piggies goes to the market, this little piggy stayed home, this little piggy had roast beef, and this little piggy had none, and this little piggy said weee weee weee all the way home.
So you see it is a cow that dies not one of the piggies. If you are a vegetarian you could say turnips instead of roast beef or something.
