To the Original German Settlers of PA, the creature that you eat on New Year's day, will indicate how you will make your living in the new year...therefore, never serve poultry (which "scratches out" its living)...pork or beef is much more preferable, hence the German preference for Pork and Sauerkraut on New Year's Day.
