I teach science, 6th grade. I like for my students to do projects where they test something. At our last years sci fair, one of my winners tested brands of Band-Aids, made a chart and decided which was best.

Make a rocket... it will be fun and show newtons law, for every action, there is an equal and opposite reaction.
Toilet paper role, make a cone on top for the nose, and fins and decorate it as you please. Get a Fiji film holder (its lid fits snugly, perfect for this experiement) and alka seltzer.
When all is complete, insert the film canister in the bottom of the tp roll, quickly fill the canister 1/4 way with water, then drop in half a alkaseltzer, put the lid on quickly and set it on the ground. You have about twenty seconds before the gas action of the alkaseltzer forces the canister open shooting the lid off and sending the orcket soaring through the air.

Compare two or more of just about any product at the grocery store. How much fluid can x and y brand paper towels absorb? Which detergent gets a white shirt with a grass stain cleaner? Which bread stay fresh the longest? Which brand of gum keeps its flavor the longest? These are all very easy to go thru the scientific process with and to make a simple graph of data at the end. diet coke and mentos bomb:
4 mentos (candy)
1 plastic bottle of 16 oz diet coke
magic tape.
Stack the 4 mentos on top of each other and secure the stack with magic tape.
Remove the screw cap from the plastic bottle and dry the inside of the cap with a Kleenex.
Secure the stack of Mentos to the inside of the bottle with more magic tape.
Carefully screw the bottle top back on, making sure that your stack of Mentos will not touch the liquid in the bottle (pour a little out if you have to).
When ready to launch your 'bomb', find a large area outside (basket ball court) and heave the bottle as high into the air as you can so that it will come down and impact the ground.
Upon impact, the Mentos will mix with the Diet coke and cause the bottle to explode and zoom through the air.
Careful: the 'flight pattern' is unpredictable.

My favorite science experiment was when I put chicken bones in various solutions to see which ones made the bones the bendiest--I think I did water, vinegar, lemon juice, hydrochloric acid, and something else. You can pull out all sorts of scientific findings from this; I think we (my parents helped a whole lot!) linked it to calcium, and what substances break calcium down. The guiding question was "What makes bones hard?" The other project that I loved, and that was a crowd pleaser, was to dissect a cow's heart. You can buy them at the butcher, and I made a poster explaining the major structures and how they worked, and then brought in a heart to demonstrate with. It was great!

Make a volcano however you want, paper-mache, mud....
whatever...
when you want it to erupt...mix baking soda with vinager...add red food dye for color...
