PMS is not something that women can just stop, or something that they choose to have happen. All of the above mentioned sins are things that people feel or want. PMS is not a feeling, it is an act of nature.

Because when the men who produced the texts for the seven deadly sins were doing so, women were considered subservient. As men do not suffer with PMS (but they are afflicted with the seven listed above), it was not considered relevant to include.
