Are you asking HOW to analyze fruits and vegetables for their acidity?

If yes, then one could use a pH meter (probe could be inserted into flesh, or a juice or puree could be made and then tested with probe) for quantitative data.

One could also use pH paper for a less accurate quantitative analysis.

Sorry, I would start with an historical note.
In the past times, a french chemist (N. Vauquelin) discovered malic acid in mature fruits.
Nowadays, in the lab's practice it is measured acidity's containt in sour foods by titrimetric operation.
After preliminar preparation of sour extract of your foods, you can execute an alkalimetric determination of its "equivalent alkalimetric". The latter are converted in a conventional basis (e.g. acetic acid's mass) thus it is expressed like "equivalent acetic concentration".
