It depends on the fish. First, though, we should define sleep. Unfortunately, we don’t know what sleep is. We need it, whatever it is. Fish do too. Mammals, birds, and reptiles sleep in a state characterized by profound changes in brain-wave pattern. Most fish don’t show this brain-wave change when they rest. So, fish-sleep is different. However, all fish rest in a shutdown mode and recuperate like us periodically.

Some reef-dwelling parrotfish sleep at night. A fish holes up in a crevice and envelopes itself in an odor-squelching slimy cocoon. Prowling predators can’t detect it. The fish snoozes so deeply that divers can hold it while it slumbers on.

Certain sharks (the Reef Whitetip, Tiger, and Great White Sharks) "sleep" during the day and hunt at night. Streamlined sharks, like hammerheads, normally keep moving to push oxygen-bearing water over their gills to breathe. Their fins are too flabby to perform this task. However, the organ (Central Pattern Generator) that coordinates swimming movements isn’t in the creature’s brain but rather in its spinal chord. So these fish can swim while unconscious. Maybe they sleep.

Herring, minnows, and tuna sleep at night. Catfish, bass, and perch sleep under a log or riverbank during the day.

By the way, fish don’t close their eyes when they sleep. They lack eyelids.

I believe that fish, along with other aquatic creatures, sleep using only one half of their brains. One side sleeps while the other side stays alert for signs of danger, & then they swap over, & the other side sleeps etc.
