in canada why does the water in the sink and toilet drain out counter clockwise when in austrailua it drains clockwise

It doesn't. We have three showers, a bath, five wash basins and five toilets: some drain clockwise and some anticlockwise.

This is a myth. The direction depends on the structure of the toilet or sink. The curiolis effect forces are not strong enough to affect any change.

Because they're on opposite sides of the equator (assuming a sink or toilet where the structure does not overcome the curiolis effect ;) ).
