Does anyone know if it is possible to use a digital camera in video mode as an input device for an iMac. I want to replace the isight camera with my canon camera basically - any ideas??

You would need a video camera for this with a fast interface such as Firewire. A point and shoot in video mode would be in the wrong format.

To replace an iSight camera you need a camera that connects with Firewire (not USB).

These are fairly rare so check carefully.
