I can intercept and cause fumbles just fine - but I need more defensive moves like sacks! Thanks!

I just change the AI. Settings, Game Play, AI. But I have it on an Xbox. For me, my way of getting more sacks is choosing my favorite Defensive End and align him outside-shoulder to the last o-lineman on his side. Then I sprint forward and swim or rip or cut (defensive moves) through him and try to get through the QB. It also works in Superstar mode, if your Superstar is a D-end. It always works for me, as my Superstar is a D-end. I just line up outside shoulder of the last o-lineman on my side, and immediately sprint in and swim or rip or cut my way past. It takes a couple of days of practice to know which move to use though. If you're angled right, one move can get you past and lead to a sack.
And to get better runs, I just lead blocker controls to push the defender back a good 5 yards before switching back to the runner. And you also have to know what moves to use at the right time, jukes, spins, highlight stick, stiff arm. Takes practice too.
