What do photographers call that thing they do with an image, where they make it all black & white & then they add color to like a shirt, or a hat or something?

Example: So just the hat & shirt were pink but the rest of the image was black & white?

What is that called? I'm REALLY curious to know!

Its not really called anything, all you do is get an image, change the color scheme (black and white) and add color to whatever you want, of course you need photoshop or a similar kind of program
