If you receive either a 1099(self employed) or W-2 (employee) they MUST keep track to know what to report to the IRS ..On a 1099 you are responsible for your own taxes. With a W-2 they must withhold a set amount for them unless you make under a certain amount in which case they don't have to withhold anything.

Depends on the company. Oppinion Outpost and 2Cents both have a screen where you can see what see what you've earned (I think they only keep them for a certain length of time). All the ones with points system will keep a record of how many points you have but not all keep a record of how many you've spent (at least not one you can view). Either way, its good to keep your own records if you think you are going to make enough to have to report it on your taxes.
