Because it's a tradition. The first conquerors of America, Spanish soldiers offered native people turkey and Indians offered corn. By these offers, a deal was made between the two for peace, praying to god. that's why we have today thanksgiving day to remind us that event.

Because supposedly the Pilgrims ate turkey -- although the turkey they ate was the wild turkey the woods were full of 400 years ago, not the big-breast, mass-produced birds of today. Of course, no one really knows for sure if the Pilgrims really ate turkey or not. But, the wild turkey, being native to the North American continent, is closely identified with the good ol' U.S. of A.
