If so, do they have to stay in the projection room or do they just start the movie and go back to the snack bar to deal with the popcorn rush?

Most regular theaters have the projectionists doing double duty as you said... being split between booth and helping out elsewhere (concessions, usher, cleaning, etc).

I was lucky. I was an IMAX projectionist at a dedicated IMAX theater (no regular theater screens) Way it was set up, we "booth gods" didn't have to go downstairs, nor were we under the floor managers' chain of command. It was us, chief projectionist, and theater manager. Excellent for avoiding all the immature power tripping and politics on the floor.
