Wait!

You took away $5...but you did not specify from who. If you took it from me, I would have a total of $5 in coins.

HOWEVER...you did not specify who you took the $5 from, and therefore I assume you took the $5 from somewhere/someone else. Thus, I would end up with $10. I'd have the $5 you gave me the first time plus the $5 in coins.

Ten dollars, because at the second action "then took away $5" you didn't state that you specifically took the five you initially gave out to me. So it may read: you gave me five bucks, you took away five bucks [from a pile on the table] and then gave me another five in coins. arf!

surely still $5 in coins. arent you supposed to give $10 and get $5 note and $5 in coins, and do something wit that?

Depends on how much you had in the first place. If you have 100 dollars, then you have 105 dollars.

Or, if you said took away five, but didn't mean away from you, then you would end up with ten dollars more then you began with.

i would have $5 in coins plus however much i already had, and why would you want to keep swapping the money over? good little 'trick' (for want of a better word) though!
