here did the term GI Joe originate? and what does the "GI" stand for?

GI - Government Issue
GI Joe originated in WWII as a general name for soldiers. It might have been brought about by a editorial page cartoon artist who just plugged the name in. One or two of the cartoonist were really famous, but I can't remember their names - the one that I remember always drew American soldiers, dirty, needing a shave, having a cigarette hanging out of their mouths and their helmets tilted back.

GI Government Issue (as in GI Joe) and
GI General Infantry (less common)

it means the guys who are new, on the bottom and haven't worked their way up yet. Regular guys.

As for GI Joe, look to wikipedia, G.I. Joe is an American cartoon soldier. The name was created by David Breger when he was asked to create a comic strip for United States military magazines during World War II. Breger came up with the title "G.I. Joe" from the term "G.I."
