I take down my tree on Super Bowl Sunday....but I'm strange. Most people take stuff down on New Year's Day or shortly after January 6th if they are Catholic.
Try to pack your boxes with things that go together. Nothing worse than having to pull out every single Christmas decoration box to find the tree ornaments. If you decorate every room, try to keep everything from the room in the same box.

The Christmas Season actually finishes with the Christian Feast of the Epiphany - the traditional day the Three Kings/Wise Men visited Jesus in Bethlehem bearing gifts of Gold, Frankincense and Myrrh.
The Feast of the Epiphany takes place on the 6th of January or the closest weekend. As this marks the end of the celebration of Jesus' birth, this makes it a good day to take down your decorations.

Mis Manners says the proper way to do it is they go up after thanksgiving. Come down after New Years. Other wise they interfer with other holidays. So Tuesday take them all down.
Wrap them in Newspaper and mailing boxes. Pack and seal with tape like your packing to mail. Then they can go back in the storage shed. Any new purchases should be done after the holiday to get the cheepest prices for the next year. Never buy prior to a holiday that is when you pay the highest prices.

For question 1. I follow the simple song 12 days of Christmas.
For me this also represents the Birth of Jesus and the journey of the Three Wise Men that visited the Baby Jesus with gifts on January 06.
So I start on December 25 till January 6
I give my kids gifts on both of these.
As for question 2 I buy the Big HUGE Plastic Bins and Store them in the basement, closet or Attic

I take mine down after the new year, usually New Years day. I pack everything in large tupperware tubs that can be easily toted to the garage and are ready for next year. I pack things by room so next year it is extra easy to set up. takes a little longer but is well worth it.

Usually people leave them up until New Years but you can take them down whenever, you should get organizing boxes at Hobby Lobby I have them they keep everything together and safe

After the new year weekend. Put everything back in the box it came in and then put all of that into a storage container.

We're looking to take ours down the first weekend in January, weather permitting (Dallas). I figure going beyond that is kind of losing the "specialness" of having them up for the holidays... =)
