a big part of it may be commercial- i mean for valentines day, who wants to see a nice big cream colored brain with an 'i love you' next to it? A heart shape is much more pleasent looking...
However, the only logical reason that i can think of is that when you love someone or something, or when you get really excited about someone or something, you heart beat rises, and you get that rush of energy or that warm fuzzy feeling inside, therefore, people make the link between that 'loving' feeling with the heart. That's my theory anyway....

Because the feeling comes out through your heart. All thoughts start in the brain but where they come out is what we pay attention to. Hunger and smell start in the brain too. But we are hungry in our stomach, not in our brain. Well you get the picture

When you are not happy with your love, you develop blood pressure and it affects your heart directly.
When you are happy, your heart is pumping blood at the normal pressure.
From that observtion, we see what gets affected and that is why we have taken the heart as the symbol of love. :)

Because your heart is like your motor, It drives you (if you will) and it's a metaphore refering to what we are driven by, Ya know the frase "out your heart into it"... It's like saying put your whole life and everything into it. So saying that someone has your heart is like saying they have your life devotion...
