Apply for a carry concealed weapon permit, invest in a kevlar bullet proof vest, and/or consider taking a couple of weeks elsewhere, where no one knows you, at least until Laura is out of witness protection and the person making the death threat has been isolated.
If the ex's uncle is a police officer is he cooperating in the prosecution or is he perpetuating the threat? You aren't clear. Does the ex have any way to reach out of prison to harm Laura or you? Rapists reportedly are at the low end of the food chain in prison.

I am really very sorry about the situation you and your girlfriend find yourselves in. The only real suggestion I have it moving to a different state. It would keep you out of the proximity of the people threatening the both of you. I know that sounds unreasonable because you've done nothing wrong. But sometimes the best thing to do is also the hardest. Good Luck to you. I hope everything works out.

Hey take a chill pill. How pathetic are you. If this is real, why are you asking a bunch of strangers for advice. Gets some b.alls and make your own decision.

This is not the place to seek advice because you can't reasonably be expected to recite the facts online.

Personally, I'd move to Canada or England. But in my profession that's possible; in yours it might not be.

You have to get out of sight and out of mind of these crazy, evil predators.
