I can sell my labor--that's called wages.
I can sell my learning-- that's called salary.

If I own both those, then why do governments prohibit me from selling my organs, a kidney here, or a lung, or a portion of my liver there, and make money?

Who owns me?

There are "banks" which will pay for my sperm; but if I want to sell a testicle? or an eye?

The U.S. government only tells you that you are 'free'...within our limits though. So what if C. Montgomery Burns wants and can buy my organ? To the highest bidder, I say!

The same way I sold my property in May, to the highest offer....!

You own you but since you live in a society with laws you have to abide by them or pay the consequences.
In 1984 the government passed a law making selling organs illegal to try to beat the blackmarketers that were selling organs to the highest bidder while people on waiting lists were dying. The blackmarket for organs is big business and many people died while having organs harvested....the "brokers" just didn't care about the seller, if they died oh well, more money in their pockets.

The government has always placed restrictions on things it deems wrong or bad for society, safety, ect. In this case the government (right or wrong) placed restrictions on harvesting organs. Part of the reasons given is to prevent rich people from being the only ones getting kidney transplants (because they could afford to buy them and not on the basis of who needs it the most). So its not that you can't sell your organs, its that others are not allowed to buy them.

The practice of selling body parts is immoral - it reeks of slavery and the rich being able to take advantage of the poor

that is why it is illegal - and rightly so

The practice of rich people buying body parts from poor people is unseemly and should be prohibited -- and is.

The government owns you. That's why men can be athletes selling their physical prowess but women cannot sell their "physical prowess".
