How do I stop rain fade using a satellite dish?

It can not be stopped completely. Make sure the dish is aimed as well as possible, not just in the ballpark. The extra strength from aiming it better will help a little bit.

This is a function of the technology, not necessarily a defect.

Purchase a larger antenna (dish). I had the same problem until I bought a 6' dish. The upside is higher gain, the downside is that its not very pretty.
