I am not yet qualified for the good paying career I am training for. much less having the "two years" experience to get the interviews for it. But if I take a lesser position or one in a different industry, I may be trapped for the rest of my life in a lower paying situation. Still, I need income for the next 6 months of training, food, rent, etc. What is fair to my goals and won't require me to tell big lies to get a job.

My son was in a similar situation a few years back and he took a bartending course (quick, not too expensive) and signed up with event planners and caterers and made a good amount of money working weddings, bar mitzvahs, etc.
