The surface tension. Watch raindrops running down a window and see the way they join together. Float a needle or a paperclip on a cup of water. Add a drop of detergent to reduce the surface tension and see the needle sink instantly. Move a drop of water around on a tabletop just using your finger. Endlessly fascinating.

Water is amazing. The solid form is lighter than the liquid form (ice floats) if not what would happen to aquatic life in winter? The viscosity (how thick a liquid is) does not really change from just above freezing to just below boiling. Think about honey or syrup and how it gets more runny as it gets warmer, oil same thing. But not water.
Again aquatic life would probably cease if water got thick when it was cold.

In the movie "What the bleep do we know" it shows that vessels of water with different words labelled on them, under a micoscope show different designs in them. I found that very interesting.
