The most evident signs are, he likes Shopping Malls, he knows Judy Garland's "Somewhere Over The Raimbow's" lyrics, he moved from Omaha to South Beach, and he posts on 'Lesbian, Gay, Bisexual, and Transgendered' without insulting gay people. Chances are, the man is as gay as a picnic basket.
If he dates only women, belchs, then he says "excuse me", then he is most likely straight.
Then there are the so called "Homophobes" most of whom are actually repressed gay men, just stay away from them.

The only sure way to know is if the man has a sexual preference towards other men.
Any other outward signs are not 100% sure. A man may "camp it up," and swish around with a limp wrist, but he may not be gay. He may only be very demonstative. (yes, he probably IS gay, but the only sure way for YOU to know is to ask him)
Interest in the arts, cooking, decorating, crafts are not limited to women and gay men. I LOVE to sew, and I was thrilled when my kids got together and bought me a sewing machine a few years ago. I also know that I have a better decorating sense than my wife. She, on the other hand has a much better grasp of math while I fumble around, trying to balance our checkbook.
Following the traditional stereotypes, she is mechanically inept, while I have been an engineer at one point in my working life.
In other words, you can look for, perhaps even find signs of "gayness," but you can never be sure. People are as varied in as many ways as there are people. I just saw a post, here, on Yahoo Answers asking about "the fact that John Travolta is gay."
What were the "signs?"

First and foremost - just know - I am gay and there are many signs - you just have to know what you are looking for?
- Flamboyancy - acts like a real tart
- Crotch watcher - glances and steals glimpses of men's crotches
- Style of Dress - wears pink and/ or scarves
- Carries a 'murse' - Male purses maybe in - but there is liking a murse and loving a purse
- Gets really emotional - every little thing bothers him, when before nothing did (guilt complexes can change one's emotions)
- Takes a little longer in the bathroom than normal - cruising (if you don't know what that means - then ask)
- Friends change - he hangs out with either 'butch women' or 'flamboyant guys'
- Likes to hang out in 'men bars' - this is a dead give-away
If you recognize any of these signs - then be brave - ask him - let him know your suspicions - if he reacts - well either he's not and will argue with you about it - or he's just not willing to accept that he is
good luck

Many many signs. If the person doesn't tell you it can be because it's not your business. If the person likes or trust you they may. Just to find out if a person is gay depends on why you need to know.

you know if he tells you he's gay. that's probably the best sign you're going to get. all these gay stereotypes are incredibly ignorant.

ask him what's his favorite Madonna album.
If he has one, he's gay.
For more clues, go to a gay bar and look at people there.
