White varieties of cauliflower turn turn a light yellow when the heads are exposed to light while growing.

Farmers and gardeners used to tie the leaves around the cauliflower head (which is actually the unopened flower buds of the plant) to keep it white.

Over the years, people used selective breeding and hybridization techniques to develop plants that would keep their own leaves tight around the flower head so the cauliflower head would stay white without so much human effort. Those varieties are referred to as self-blanching types.

Cauliflower is a relative of broccoli, cabbage, and the rest of the cruciferous vegetables (that family is usually called brassicas by horticulturists).

There are varieties of cauliflower that are other colors, but they are mostly home-grown varieties that usually aren't available in the store.

Cauliflower(English spelling) is considered white. Sometimes it is slightly cream colored. There are some new varieties that are gold. Brociflower is green and is a cross between cauliflower and broccoli.
